Coconut Chicken!


Sticky Coconut Chicken!

6 breast or thighs
2/3 canned coconut milk
1 Tlb minced fresh ginger
1 tsp fresh ground pepper
1 tsp hot chili flakes

Sauce
3/4 c rice vinegar
1/2 c sugar
3 Tlb soy sauce
1 tsp hot chili flakes
4-5 green onions, finely chopped
1 Tlb cornstarch
2 Tlb cold water

*In a large bowl mix coconut milk, ginger pepper and chili flakes. Add chicken and mix. Cover and chill for 1 hr up to a day.
* Lift chicken from bowl, reserving the marinade. Lay on a oiled grill high heat. Cover and cook. Baste frequently with the remaining marinade
When done transfer to a platter, garnish with green onions if desired.
* In a sauce pan combine rice vinegar, sugar, soy sauce, and hot chili flakes. Bring to a boil over high heat and cook until mixture is reduced to around 1/2 cup. (8-10 min)
Mix your cornstarch and water and add to the mixture. Cook until thick.
* pour sauce over chicken!


• With the remaining coconut milk you can make the brown rice recipe posted as a treat or save it for another time!
