These two recipes came from Rachael Ray!
I'm not a huge fan of her recipes but these two were winners.
the sandwich is a good twist on a BLT.
The pork tenderloin was very tender, moist and flavorful.
2 12-14 oz pork tenderloins
5 cloves of garlic
1 Tlb ground cumin
1 Tlb dried oregano
1 Tlb finely ground coffee
Salt
1 lb tomatillos husked (I used 5 tomatillos)
1 jalapeno chile halved lengthwise and seeds discarded
1/3 c cilantro leaves
vegetable oil for brushing
* Cut lengthwise down the center of each pork, without cutting all the way through, then open each tenderloin like a book.
* In a bowl combine the chopped garlic (4 cloves) the cumin, oregano, coffee and 1 Tlb salt. Rub the mixture on the pork. Transfer to a baking dish and cover with plastic wrap and refrigerate for a least 1 hour up to 24hrs. (The longer the more tender the pork will be)
* Heat a large skillet over med heat. Add the tomatillos and jalapeno and cook until the tomatillos are softened. ( about 8 min)
* Using a food processor, mix the tamatillos, jalapeno, remaining clove of garlic and the cilantro until smooth and season with salt.
* Preheat the broiler. Brush the pork with oil. Broil 5 minutes on each side
( I probably did 8 min on each side and used 1 pkg of the tenderloins that you get from costco)
* Cover with foil and let rest for 10 min.
* Slice on an angle accross the grain and serve with salsa!
Triple Decker Strawberry Chicken Club Sandwich!
12 oz thick cut bacon
1 1/2 lbs skinless boneless chicken breast
Salt and Pepper
1 avocado halved and pitted
2 Tlb fresh lemon juice
1/3 c mayonnaise
12 slices whole wheat toast
2 c baby spinach
1 1/2 c hulled and sliced strawberries
* In a large skillet cook bacon until crisp. drain on paper towel. Pour off the fat and heat skillet again to cook the chicken.
Salt and pepper the chicken and cook over med heat until done. Let rest 5 min.
While chicken is cooking. Puree the avocado (blender, food processor, or just mash with a fork) with the lemon juice. Stir in mayo, then season with salt and pepper.
Spread avocado mayo on each toast slice, layer with chicken, then bacon, another piece of toast, spinach, strawberries and then mayo again.
