Sweet Brown Rice!

This recipe comes from Chef Brad.
This is his recipe of the month.
It is very sweet and you could serve it as a side or just eat it as a dessert. If you like rice pudding you should like this. I liked it a little warmer than room temp, and to eat it as a dessert.


Sweet sticky brown rice with mangoes & coconut cream

2 c warm cooked brown rice
1 c cooked Quinoa
1 C coconut cream
1/2 tsp salt
3-6 Tlb sugar or Xagave

* Combine coconut cream, salt & sugar in medium saucepan. Bring to a boil over med heat, stirring well to dissolve sugar. Cover and remove from heat.

* Place rice in a large mixing bowl. Pour in the coconut cream sauce and stir gently to blend. Cover with plastic wrap. Set aside for 30 minutes. Serve rice at room temperature with slices of fresh mango.

* Quinoa is a grain and you can find it in the bulk section at sprouts. I used white quinoa. Cook it just like you do rice 2 to 1 ratio. It takes 20 min on the stove top. Or 5 min in a pressure cooker.

* Xagave is a natural sugar subsitute.
