Seared Ahi with Asian Vinaigrette!
* Dressing
1/4 c rice wine vinegar
1 TLB soy sauce
1/2 freshly squeezed lime
1 tsp grated ginger
1 tsp Chinese mustard
1 TLB chopped cilantro
1/2 c canola oil
* In a small bowl, whisk together the vinegar, soy, lime, ginger, mustard, and cilantro. Pour in the oil and continue to whisk, until emulsified.
*Tuna
1 1/2 lbs Ahi Tuna Loin
Salt and Pepper
2 TLB dark sesame oil
1/3 c sesame seeds
* Season the fillets with salt and pepper, lightly coat with oil. Put sesame seeds on a plate. Coat the top and bottom of each fillet with seeds. Heat a large, heavy skillet over high heat. Add fillets, cook about 3 minutes. Turn and cook until desired doneness. 3-4 minutes for a rare stake. Slice the Tuna into 1 inch strips.
*Salad
1 head of red leaf
1/2 bag of baby spinach
2 green onions diced
1/2 c fried rice noodles
1/4 c slivered almonds
2 navel oranges, peeled and sectioned
* Mix the greens together and add all other ingredients. Spread out on dishes. Lay the Tuna strips on top of salad then drizzle with the vinaigrette. Season with salt and pepper!

I ran into your blog thru Lindi I hope you dont mind it I drop in. I have been trying your recipes and you are an amazing cook! I cant wait to try the Ahi Salad. I cant believe how grown up your kids are, you still look as beautiful as you did in High School. Hope all is going well in Arizona. Tell Tiffany hi for me I could not get on her blog.
