Goat Cheese Burgers with Beets!




These Goat cheese Burgers are pucnched with fantasic flavor.


I used ground Turkey, and it was still delicious!
If you like beets they are worth a try.







Goat Cheese Burgers with Beets!

1 large beet, peeled and sliced 1/4 inch thick
(or 1 14.5 oz can sliced beets, drained)
1 1/2 lbs ground beef sirloin
1/2 C plus 1 Tlb finely chopped flat leaf parsley
2 cloves garlic grated
2 Tlb worcestershire
salt & pepper

1 Tlb EVOO

3 oz goat cheese
1/2 C sour cream
1 Tlb finely chopped fresh thyme
1 Tlb finely chopped fresh dill
1 tsp grated lemon peel

4 crusty rolls
4 thin slices red onion
4 leaves red leaf lettuce

*Cook beets either wrapped in foil and bake like a baked potato at 425 for 40 min or In a med sauce pan, combine the beet and enough water to cover. Bring to a boil then simmer until tender, 10-12 min. Drain.
* In large bowl combine the beef, 1/3 C parsley, garlic, Worcestershire, and season with salt and pepper. Form into 4 fat patties and make a thumbprint in the center of each. Coat the patties with the EVOO. Heat a skillet over med-high heat. add the patties and cook, turning once, 6-8 minutes for med. Or grill your pattie.
*While patties are cooking, crumble the goat cheese into a med bowl. Add sour cream, thyme, dill, lemon peel, and remaining parsley.
*Place patties on the roll bottom; top with beet slices, goat cheese mixture, onion, and lettuce!
