Caramel Crunch Bars
80 club crackers
1 C butter
2 c graham cracker crumbs
1 c packed brown sugar
1/2 c milk
1/3 c sugar
2/3 c creamy peanut butter
1/2 c semisweet choc chips
1/2 butterscotch chips
* Line a ungreased 9x13 pan with foil, leaving an extension of foil on either end. Line the foil with one layer of club crackers.
* In sauce pan, melt butter over med heat. Add the graham crackers, brown sugar, milk, and sugar. Bring to a boil and boil for 5 min, stirring constantly. (begin timing when you see the first bubbles.) Remove from heat and spread half of caramel mixture over the crackers. Place another single layer of crackers on top and then pour the rest of caramel on top. Top with another row of crackers.
* In a saucepan or microwave, combine the peanut butter, choc chips and butterscotch chips. Melt over med heat. Spread over the top of crackers. Chill for 1 hour. Lift the foil from pan. Cut into bars. Store in fridge!
