Flank Steak and Soba Salad!


Beef and Soba Salad


8 0z shitake mushrooms
1 Tlb olive oil
Salt and Pepper
1 bunch asparagus
8 oz soba noodles cooked drained, and cooled
1 Tlb minced ginger
1 clove garlic minced
1/4 C soy sauce
1 Tlb honey
1 1/2 tsp dijon mustard
1 flank steak grilled
sesame seeds
scallions thinly sliced

I used Flank Steak and marinaded it in our favorite family marinade!
1/4 C soy sauce
3 Tlb honey
2 Tlb white vinegar
1 1/2 tsp garlic powder
1 1/2 tsp ginger
3/4 C oil
*Marinade over night. Throw on a hot Grill!
If you choose not to make the soba noodles this marinaded steak is fantastic alone!

*I just took a large skillet over med heat and put in olive oil. Then I diced up my mushrooms and threw them in along with the asparagus. season with salt and pepper and cook until the asparagus is tender.

*Dressing
whisk together the ginger, garlic, soy sauce, honey and mustard.

* Toss the soba noodles with the vegetables and pour the dressing on.
* Cut the steak at an angle across the grain and lay on top of noodles. Sprinkle with sesame seeds and scallions.

* I found soba noodles at fry's (smith's for those in Utah)
in the Asian aisle. the color doesn't look so appetizing, but they taste good!
* Also the recipe doesn't call for snap pea's but I just threw them in. it was a good addition if you like them.
*I also could only find dehydrated shitake mushroom in the Asian aisle also. I just soaked them for a bit then diced them up before sauteing them.
