Meat Loaf!

As a little girl growing up I hated when my mom made meatloaf. So for years I never even attempted to make a meatloaf
Until about 7 years ago when I was watching a T.V. show they made this meatloaf.
So I gave it a try, and it has been a family favorite ever since.

Stuffed Meat Loaf!

1 lb ground beef
1/2 c rolled oats
1 egg slightly beaten
1/3 c chopped onion
3/4 tsp salt
1/8 tsp pepper
1 tsp Worcestershire sauce
1/3 c milk

1/2 c bread crumbs
1 c cheese
2 c mashed potatoes
1/2 c bbq sauce

*Combine all ingredients, except the bread crumbs, cheese, potatoes and bbq sauce. Mix well!
Lay out a piece of wax paper and sprinkle the bread crumbs on it. After the meat is mixed dumped it out on the bread crumbs and shape into a rectangle shape. Sprinkle the cheese over the meat leaving the edges clear. Then top the cheese with the mashed potatoes.
Using the wax paper to get it started roll it up. Pinching all the sides together.
Put in a lightly greased loaf pan seam side down.
Bake 350 40 min. pull out of oven and spread the bbq sauce on top, then pop it back in the oven for additional 5 - 10 min. Let cool slightly before cutting.

* When ever I post a recipe with ground beef 98% of the time mine is made with ground turkey.
As is this meatloaf. My only suggestion is that if you use turkey it is much softer than beef so omit the milk or just 1/4 c instead of 1/2.
* My family of 5 can eat the whole loaf pan.
