Sweet Potato Rolls!
2 Tlb yeast
1 C warm water
15 oz can sweet potatoes
1/2 C sugar
1/2 C butter softened
2 eggs
1 1/2 tsp salt
5 C flour
* In a large mixing bowl, dissolve yeast in warm water. Let stand for 5 min. Drain and mash sweet potatoes. Add to the yeast mixture along with sugar, butter, eggs, salt, and 3 cups of flour. Beat until smooth. Add enough remaining flour to form a soft dough, and pulls away from the sides. knead for 7 min. Sprinkle flour on counter and dump it out. Oil a bowl and place the dough in the bowl turning once so the oil is on both sides. Cover and let it rise until doubled. (about 1 hr). Punch down dough and divide into thirds. Roll each portion into a 12 inch circle. Cut in 12 wedges brush with butter and roll up. (Crescent style- big end to small end)
cover with dish towel and let rise until doubled.
Bake 350-15 min
*I cut up 1 sweet potato boiled it then mashed it instead of canned.
