Soup!

This zucchini soup may not look so yummy, But don't judge a book by it's cover!
My kids were not all that excited that when they sat down for dinner this is what was served to them. Until... They tried it. They loved it!
It doesn't get any easier than this for a soup recipe.
It is a really lite soup, so serve it with a good hearty bread, or it could also be served as a side.
I got 6 servings out of this recipe.
If this is all your serving I would double it so that there is plenty for seconds.


Zucchini Soup!

1 C chopped onions
2 Tlb butter
3 zucchini's sliced
2 C chicken broth
1/4 tsp salt
1/8 tsp pepper
1/2 c half and half
1 c grated cheese
sour cream
6 slices of cooked bacon then crumbled

* In a large saucepan cook onions in melted butter until tender. Add sliced zucchini and chicken broth and bring to a boil. Simmer until tender. (about 15 min)
Add salt and pepper. cool slightly. Pour mixture into a blender and puree it. Return to saucepan and stir in half and half. Reheat but not boil.
Garnish with a do lip of sour cream, grated cheese and bacon.

* I put in 1-2 Tlb of ultra gel to thicken it a bit.
* May need extra salt and pepper
